Job summary

Citarella is seeking an experienced Meat Department Manager to lead the Meat Department with a focus on quality, craftsmanship, and service. You will oversee daily operations, train staff, manage inventory and merchandising, and drive department sales and profitability.

The ideal candidate combines advanced butchery skills and deep knowledge of premium meats with strong leadership and guest-focused service. This is a hands-on role in a fast-paced, high-standard gourmet environment.

Qualifications

• 2–3 years of meat department management or supervisory experience in grocery, butcher shops, or specialty food retail.
• Advanced butchery and knife skills, including cutting, trimming, deboning, and portioning meat.
• Extensive knowledge of premium meat cuts, quality standards, handling, storage and rotation.
• Experience with inventory management, ordering, merchandising, shrink control and profitability.

Responsibilities

• Lead, train, coach, and develop meat department associates to maintain a service-focused team.
• Oversee daily department operations, including staffing, scheduling, workflow, and opening/closing procedures.
• Provide expert product recommendations and fulfill guest requests to ensure outstanding service.
• Manage product ordering, receiving, inventory, and rotation for freshness and stock levels.
• Monitor sales, labor costs, shrink, waste, and inventory performance to support profitability.
• Collaborate on product assortment, promotions, and department performance.
