Job summary

CBBC OpCo, LLC is seeking an experienced Meat Department Manager to oversee daily operations of the retail meat department on a military installation. Responsibilities include ordering, receiving, cutting, packaging, pricing, and merchandising, as well as leading staff to ensure consistent performance and customer satisfaction.

The role requires strong knowledge of meat fabrication, food safety, and regulatory compliance, plus ability to manage budgets, inventories, and promotions.

Qualifications

• High school diploma or equivalent required; Associate’s or Bachelor’s degree preferred.
• 3+ years of meat department management experience.
• Experience with meat cutting, fabrication, and merchandising.
• Strong knowledge of food safety, sanitation, and regulatory requirements for retail meat operations.
• Ability to obtain and maintain base access credentials for a military installation.

Responsibilities

• Oversee daily operations of the meat department, including product ordering, receiving, cutting, packaging, pricing, and merchandising.
• Supervise, schedule, and train meat department staff to ensure coverage and performance.
• Ensure compliance with food safety, sanitation, and USDA/FDA regulations and Navy Exchange requirements.
• Monitor inventory levels and shrinkage; minimize waste and maximize profitability.
• Manage department budget, labor costs, and sales; prepare leadership reports.
• Maintain strong relationships with Navy Exchange management for smooth operations.
• Develop merchandising plans to drive sales and enhance customer experience.
• Ensure FIFO/FEFO handling and proper cold-chain storage of meat products.
