Job Title: Meat Cutter

Department: Meat

Reports To: Meat Manager and Store Director

FLSA Status: Non-exempt

Essential Duties And Responsibilities

The Meat Cutter performs the following duties (other duties may be assigned):

• Cuts, trims, and bones carcass sections or prime cuts to reduce to cooking cuts such as roasts, steaks, chops, stew cubes, and grinding meat.
• Works out by-products -- lamb necks, riblets, veal products -- ensures nothing gets old.
• Breaks veal and lamb.
• Cuts and weighs steaks and chops for individual servings.
• Shapes and ties roasts. Fills showcase once the meat has been cut.
• Receives, inspects, and stores meat upon delivery.
• Informs the Meat Manager about stock status, especially shortages.
• Provides customers with information about all cuts of lamb, pork, beef, poultry, and types of sausage, as well as convenience and self-serve items.
• Prepares convenience items for the showcase, including kabobs, stir-fry, stuffed, and marinated items.
• Advises customers on product preparation in the showcase.
• Assists in learning Assistant Manager responsibilities for future advancement.

Supervisory Responsibilities

May directly supervise 3-5 employees in the Meat Department. Responsibilities include training, planning, assigning, and directing work, addressing complaints, and resolving problems, in accordance with company policies and laws.

Education and/or Experience

High School diploma or GED; 6 months to 1 year related experience/training; or equivalent.

Physical Demands

Regularly required to stand, sit, walk, handle objects, talk, hear, and smell. Frequently reach with hands and arms. Occasionally stoop, kneel, crouch, or crawl. Must lift up to 50 pounds regularly and up to 100 pounds frequently. Vision abilities include close, distance, peripheral, depth perception, and focus adjustment.
