Our franchise organization, Corral Chicago, dba Golden Corral, is currently seeking energetic, friendly individuals to join our team!

Position Overview: The Meat Cutter’s performance significantly impacts the guest’s dining experience by ensuring quality and efficiency in meat preparation. High-quality meat cutting helps optimize profits and provides guests with full value in both product and service.

Responsibilities:

1. Food Production:

• Cuts meat according to product specifications and time standards.
• Uses and follows the buffet production system to ensure quality and shelf life compliance.
• Rotates cut and boxed meat to ensure freshness.
• Stocks and arranges the Meat Cooler following approved food safety guidelines.

Cleanliness:

• Sanitizes all surfaces between chicken and other meats to prevent cross-contamination.
• Recognizes signs of spoiled meat (sticky, slick, or bad smell).
• Cleans and sanitizes the meat room according to cleanliness, service, and quality standards.
• Follows local health department laws.

Operational Excellence:

• Maintains an inventory of meat products and determines production levels using administrative forms.
• Notifies the Manager of any discrepancies in product or equipment.
• Performs opening and closing administrative procedures.
• Maintains equipment according to the Equipment Maintenance manual.
• Completes duty roster tasks.
