RESPONSIBILITIES
- Lead the cut machine crew and ensure the machines operate efficiently.
- Prioritize the order of products to meet production demands.
- Set up machines based on specific products, using the correct programs to maximize yields.
- Adjust weight and thickness parameters as needed.
- Read work orders and inform machine staff of upcoming items, including piece counts.
- Operate saws to portion subprimals into steaks by weight using a band saw.
Skills
- Operate saws safely, recognize portion weights visually, and be responsible for individual yield and throughput.
- Serve as a single meat cutter for the line, responsible for merchandising of subprimals, programming machines to maximize value, perform basic troubleshooting, and lead the team when applicable.
- Have in-depth cutting knowledge, conduct yield testing, and maintain throughput (lbs.).
- Read tickets and special requests, recognize cuts of meat, and record numbers and basic descriptions.
- Work efficiently in cold/wet, fast-paced environments.
- Perform mathematical calculations to ensure accurate weight and size of products.
- Possess basic computer skills.
