Job summary

The Knox, Auberge Collection, Dallas, seeks an experienced Stewarding Supervisor to lead all stewarding operations, ensuring cleanliness and readiness of back-of-house spaces for luxury dining and events. You will recruit, train, and supervise the stewarding team, enforce sanitation and safety standards, and coordinate with culinary and hotel departments to support daily operations and special events.

Qualifications

• High school diploma or equivalent required; hospitality coursework or degree preferred.
• Minimum 3–5 years in stewarding or back-of-house F&B, with 2+ years in a supervisory role.
• Experience in luxury hotel, resort, fine-dining, or high-volume banquet environment preferred.
• Strong knowledge of sanitation standards, food-safety practices, chemical handling, and safety.
• ServSafe or equivalent certification required or to be completed within timeframe.
• Proven leadership, coaching, scheduling, and organizational skills.
• Ability to manage labor, operating expenses, purchasing, inventory, and productivity.
• Clear and professional communication with team, leaders, vendors, and regulators.

Responsibilities

• Lead all stewarding operations to ensure cleanliness, sanitation, organization, and readiness of back-of-house spaces.
• Recruit, train, schedule, supervise, coach, and evaluate the stewarding team.
• Establish and maintain cleaning schedules and sanitation procedures.
• Ensure compliance with health regulations, food-safety, chemical-handling, OSHA, and hotel policies.
• Conduct routine inspections and address sanitation or safety concerns.
• Maintain supply of clean dishware, glassware, flatware, cookware, and equipment.
• Manage storage and inventory of cleaning chemicals, uniforms, and equipment.
• Monitor dishwashers, waste systems, and coordinate preventive maintenance.
• Oversee labor, expenses, purchasing, inventory, and productivity within budget.
• Oversee waste removal, recycling, and sustainability practices.
• Collaborate with Culinary, F&B, Banquets, Engineering, Purchasing and other departments.
• Maintain records for inspections, training, chemical safety, equipment maintenance, inventory.
