Job description

Urban Farmer is seeking a Line Cook PM to join our culinary team. Portland's most sophisticated Farmer-to-Table steakhouse, located on the 8th floor of the Nines Hotel. We take advantage of Oregon’s bounty and use locally sourced ingredients and meats to distinguish our food as the best in the city.

Job Overview

Line Cook is to ensure proper service from the front line through quality control, training of line cooks and ensuring proper sanitation levels.

Responsibilities
  • Check all items against the recipe cards, verify that use records are followed for all items served, and that food is presented in an efficient, quality manner.
  • Monitor the line setup prior to all meal functions to ensure maximum efficiency during meal periods.
  • Monitor equipment maintenance and enforce the kitchen "clean as you go" policy to ensure strict adherence.
  • Prepare food of consistent quality following recipe cards and production and portion standards, per dupe from servers.
  • Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs.
  • Date all food containers and rotate as per the SOP, ensuring all perishables are kept at proper temperatures.
  • Check pars for shift use, determine necessary preparation, freezer pull, and line setup.
  • Note any out-of-stock items or possible shortages.
  • Return all unused food items to designated storage areas, covering and dating perishables.
  • Assist in planning and implementing actions to correct food cost issues; control food waste, loss, and usage per SOP.
Qualifications
Education/Formal Training

High school education or equivalent.

Experience

One to two years of employment in a related position with this company or other organizations.

Knowledge/Skills
  • Knowledge of cooking practices and procedures to perform non-repetitive analytical work.

  • Lifting, pushing, pulling, and carrying up to 70 lbs.
  • Periodic climbing, bending, full mobility, and ability to travel 30-50 feet throughout the day.
  • Continuous standing during preparation, service, or expediting.
  • Ability to hear equipment timers and communicate effectively with staff.
  • Ability to see product is prepared appropriately.
  • Ability to understand and follow verbal/written instructions and communicate effectively.

Inside temperatures can vary from -10°F in the freezer to over 100°F on the front line.
