Job summary

CCC Management II LLC is hiring a Line Cook for The Pass by Charlie Palmer at Paso Robles Inn in Paso Robles, CA. The role supports breakfast through dinner service, ensuring high standards, consistency and efficiency in a fine-dining prep kitchen.

You will operate a station, follow recipes and plating guides, and collaborate with the sous chef and culinary leadership. Compensation is hourly and opens early 2027 as the Inn launches its new dining concept with Chef Charlie Palmer.

Qualifications

• At least 2 years of cooking experience in a full-service restaurant or hotel kitchen.
• Solid knife skills and command of fundamental cooking techniques.
• In-depth knowledge of food safety standards and kitchen sanitation practices.
• California Food Handler Card within 30 days of hire.
• Ability to read and follow recipes, prep lists and tickets, and scale recipes with basic math.
• Availability for early mornings, evenings, weekends, holidays and special events.
• Strong team player who works well under pressure and manages multiple tasks efficiently.
• Excellent communication and organizational skills.

Responsibilities

• Station setup and prep: set up and stock your station before service with mise en place and prep lists.
• Prepare components to recipe: cuts, butchery, stocks, sauces and dressings.
• Follow recipes, portions, and plating guides for every dish.
• Garde Manger: salads, cold appetizers, charcuterie, cheese, cold sauces.
• Label, date and rotate products (FIFO) and store ingredients properly.
• Cook and plate breakfast, brunch, lunch and dinner items to order.
• Know menu ingredients and allergens; answer questions from chefs/servers.
• Follow chef calls from the pass and time orders to sync tables.
• Execute allergies and dietary modifications precisely.
• Taste and check seasoning, temperature and presentation before serving.
• Communicate with line, expo and FOH team; support banquets/outlets.
• Attend pre-shift meetings and training; cross-train as needed.
• Use knives and equipment safely; report hazards promptly.
• Stay current on culinary trends.
• Follow all SOPs and policies.
