Job summary

Highgate Hotels in Miami Beach is seeking a Cook to prepare all food items for Restaurants, Room Service, Employee Cafeteria and Banquets, while maintaining high standards of quality and safety. You will be responsible for cleanliness and sanitation in the kitchen, and for supporting multiple kitchen stations as needed.

The role requires culinary experience, flexibility with hours, and the ability to stand for long periods.

Qualifications

• Culinary experience required.
• Flexible and long hours sometimes required.
• Medium work - Exerting up to 50 pounds of force occasionally.
• Ability to stand during entire shift.
• Knowledge of menus and preparation per hotel standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Prepare food and stations before opening to ensure prompt service.
• Prepare and display buffet items according to hotel standards.
• Identify quality standards in fresh ingredients.
• Maintain sanitary kitchen environment and proper handling of items.
• Prepare foods for Banquets and Employee Cafeteria as required.
• Follow hotel standard recipes under guidance of Chef or Kitchen Supervisor.
• Breakdown buffets and kitchen line, store items properly after service.
• Support any kitchen position in need of help.
• Operate and maintain cleanliness of all kitchen equipment.
• Follow Health Department and company regulations.
