• Sets up batter table, collects smallwares, and prepares batter mix.
• Ensures call sheets are complete, posted and used.
• Checks equipment and reports malfunctions to the Manager in Charge.
• Balances fryers and maintains shortening level.
• Filters and cleans fryers following safety guidelines and equipment use.
• Pans sufficient chicken for operational needs.
• Prepares and cooks food as directed by the Manager in Charge.
• Ensures food meets specifications, procedures and quality standards as per SOM.
