Urban Farmer is seeking a Line Cook AM to join our culinary team. We are Portland's most sophisticated Farmer-to-Table steakhouse, located on the 8th floor of the Nines Hotel. We utilize Oregon's bounty and locally sourced ingredients to distinguish our food as the best in the city.

As part of the Sage Restaurant Group, we focus on building independent restaurants and lounges near our hotels in prime locations. We engage with the communities we serve by offering highly designed, innovative, and locally-focused food and beverage experiences. Surrounded by farms, forests, and the ocean, Portland is one of America's booming food cities, with year-round farmers markets and artisans creating some of the most delicious goods in the country. Job Overview

The Line Cook ensures proper service through quality control, training of line cooks, and maintaining sanitation standards.

Responsibilities
  • Check all items against recipe cards, verify use records, and ensure food is presented efficiently and with quality.
  • Monitor line setup before meal functions for maximum efficiency.
  • Maintain equipment and uphold the 'clean as you go' policy.
  • Prepare food following recipes, standards, and dupe from servers.
  • Start pre-prepared food items, avoiding overproduction.
  • Label and rotate perishables according to SOP, maintaining proper temperatures.
  • Check pars, determine prep needs, and set up the line.
  • Note shortages or out-of-stock items.
  • Assist in buffet stocking and returning unused food to proper storage.
  • Help develop plans to address food cost issues and control waste.
Qualifications

Education/Formal Training: High school diploma or equivalent.

Experience: 1-2 years in a related position.

Knowledge/Skills: Knowledge of cooking practices and kitchen procedures.

Physical Demands: Ability to lift up to 70 lbs, stand for long periods, and perform physical tasks as described, with accommodations available if needed.

Environment: Mostly indoor, with temperatures ranging from -10°F in the freezer to over 100°F on the line.
