Position Summary:

Responsible for all grilled, broiled, fried, and sautéed items prepared in the kitchen. This includes preparation and portioning of food items prior to cooking, such as tempura, sauces, and grilled items. Other duties include plating and garnishing cooked items, and maintaining a sanitary kitchen workstation.

Essential Functions and Responsibilities:

  • Prepare or oversee the preparation of all recipes, ensuring compliance with portion sizes, quality standards, and departmental policies as outlined in the Benihana Kitchen Guide and Employee Handbook.
  • Prepare a variety of cold and hot food items, including specially requested dishes.
  • Plan food production to coordinate with meal service times, ensuring excellence, quality, temperature, and presentation of food.
  • Select and utilize knives, hand tools, utensils, and equipment to portion, cut, slice, broil, roast, carve, skewer, garnish, and maintain food at proper temperatures.
  • Adhere to sanitation, personal hygiene, and health standards, following proper food handling techniques.
  • Keep the Head Kitchen Chef informed of inventory levels.
  • Report equipment repairs and maintenance needs to the manager.
  • Report unsanitary equipment, storage, work areas, or products to the Head Kitchen Chef.
  • Coordinate with Lead Line Cook to facilitate customer orders efficiently within required ticket times.
  • Follow all applicable laws, codes, and regulations as outlined by the General Manager and Employee Handbook.
  • Maintain a neat, organized, and clean work area; clean and maintain kitchen equipment.
  • Perform other duties as assigned by a supervisor.

Job Requirements:

  • Previous experience in food preparation required.
  • Experience in the restaurant industry is a plus.
  • A high school diploma or equivalent preferred.
  • Must be at least 18 years old.
