Job Overview

To ensure proper service from the front line through quality control, training of line cooks, and maintaining proper sanitation levels.

Responsibilities
  1. Check all items against recipe cards, verify use records, and ensure food is presented efficiently and with quality.
  2. Monitor line setup before meal functions to ensure maximum efficiency.
  3. Maintain equipment and enforce kitchen "clean as you go" policy.
  4. Prepare food of consistent quality following recipes and standards.
  5. Start food items prepared ahead of time, avoiding overproduction.
  6. Label, date, and rotate perishables per SOP, maintaining proper temperatures.
  7. Check pars for shift use, plan preparation, and setup accordingly.
  8. Note shortages or out-of-stock items.
  9. Store unused food properly, covering and dating perishables.
  10. Assist in controlling food costs, waste, and usage per SOP.
Qualifications
Education/Formal Training

High school diploma or equivalent.

Experience

One to two years of related employment experience.

Knowledge/Skills
  • Knowledge of cooking practices and procedures to perform analytical work.
Physical Demands

Includes lifting up to 70 lbs, climbing, bending, full mobility, continuous standing, hearing timers, and visual requirements. Temperatures vary from -10°F in the freezer to over 100°F on the front line. Reasonable accommodations may be made for disabilities.
