Job summary

Ilisagvik College in Barrow, AK is seeking a Sous Chef to lead preparation, production, and quality presentation across a variety of foods in a college dining operation.

This rotational role works 3 weeks on, 3 weeks off with an estimated 70–75 hours per week. Housing and three meals per day are provided for staff, supporting service for breakfast, lunch, and dinner to the campus population. This role includes supervising kitchen staff and maintaining safety standards.

Qualifications

• Must have Alaska Food Handler’s Card or ServSafe within 30 days of hire.
• Two (2) years of documented sous chef experience in a commercial kitchen.
• Knowledge and training in using a variety of food production equipment.
• Ability to work independently and complete assignments in a timely manner.
• Contract requires employees to speak, understand, read, and write English.

Responsibilities

• Assume 100% responsibility for quality of products served.
• Know and comply with standard portion sizes, cooking methods, quality standards and kitchen rules.
• Prepare a variety of proteins, vegetables, and other items using broilers, ovens, grills, fryers and other equipment.
• Ensure all catering activities are high quality, consistent, and cost-effective.
• Maintain a clean and sanitary workstation.
• Follow proper plate presentation and garnish setup for all dishes.
• Assist in food prep during off-peak periods as needed.
• Attend scheduled meetings and bring suggestions for improvement.
• Meet with supervisors to discuss daily menus, issues, and problems.
• Support an effective safety program.
• Supervise staff.
• Perform other duties as assigned by Management.
