Job summary

Colonial Country Club in Fort Myers, FL is seeking a full-time Lead Sauté Cook to lead the sauté station and mentor kitchen staff. You will prepare high-quality dishes, ensure consistency, and uphold safety standards in a fast-paced club environment.

You will collaborate with the culinary team, manage station workflow, and contribute to menu execution while maintaining portion control and quality. Previous supervisory experience and ServSafe certification are preferred.

Qualifications

• 3+ years of professional cooking experience, including significant sauté experience.
• Previous lead cook or supervisory experience preferred.
• Strong knowledge of sauté techniques, sauces, temperature control, and food safety.
• Strong leadership, communication, and organizational skills.
• Ability to perform efficiently in a fast-paced, high-volume environment.

Responsibilities

• Lead daily sauté station operations and support kitchen staff during service.
• Prepare proteins, vegetables, sauces, pasta, and specialty dishes according to recipes and chef specifications.
• Ensure food quality, consistency, portion control, and presentation standards are met.
• Coordinate ticket flow and communicate effectively with the Chef, Expo, and line staff.
• Train, mentor, and support cooks as needed.
• Maintain proper food storage, labeling, dating, and rotation (FIFO).
• Ensure compliance with food safety, sanitation, and temperature-control standards.
• Monitor product quality, inventory levels, and kitchen organization.
• Assist with prep, specials, banquets, and other culinary operations.
• Help control food waste and support cost-conscious kitchen practices.
• Maintain a clean, organized, and service-ready workstation.
• Perform other duties as assigned by culinary leadership.

Position Summary
