Job summary

Colonial Country Club in Fort Myers, FL is seeking a full-time Lead Sauté Cook to join Troon’s global hospitality team. The role oversees the sauté station, prepares high-quality menu items, and leads kitchen staff to maintain safety and presentation standards.

You will train and mentor cooks, manage ticket flow, and ensure FIFO inventory while upholding food safety and sanitation policies in a fast-paced environment.

Qualifications

• Previous lead cook or supervisory experience preferred.
• Strong knowledge of sauté techniques, sauces, temperature control, and food safety.
• Strong leadership, communication, and organizational skills.
• Ability to perform efficiently in a fast-paced, high-volume environment.

Responsibilities

• Prepare proteins, vegetables, sauces, pasta, and specialty dishes according to recipes and chef specifications.
• Ensure food quality, consistency, portion control, and presentation standards are met.
• Coordinate ticket flow and communicate effectively with the Chef, Expo, and line staff.
• Train, mentor, and support cooks as needed.
• Maintain proper food storage, labeling, dating, and rotation (FIFO).
• Ensure compliance with food safety, sanitation, and temperature-control standards.
