Job summary

Fairmont Orchid is seeking a Cook II to support Brown’s Beach House, a AAA Four Diamond restaurant, on Hawai‘i Island. You will lead kitchen activities, mentor junior staff, and ensure food quality in line with our luxury standards.

Join a collaborative team dedicated to authentic Hawai‘i experiences. The role requires strong English communication, knife skills, and familiarity with a variety of cooking techniques in a fast-paced resort environment.

Qualifications

• Leadership and communication skills required.
• Ability to work as part of a team.
• Experience in culinary preferred; ServSafe certification is an advantage.
• Must be legally eligible to work in the United States.

Responsibilities

• Act as a leader, mentor, and project a positive influence in culinary.
• Communicate with external departments to support culinary functions.
• Perform knife skills and basic techniques as instructed.
• Cook meat, fish and poultry to proper temperatures.
• Emulsify sauces/dressings and prepare sauces and dressings.
• Use various cooking methods including poaching, blanching, roasting, frying, baking, grilling.
• Read and adjust recipes according to business levels.
• Prepare items for à la carte and buffet menus per hotel standards.
