Job summary

The Monarch San Antonio – Curio Collection by Hilton, operated by Zachry Hotels, seeks a Cook III to lead advanced culinary execution across luxury outlets, banquets, and events. You will work independently in a fast-paced luxury environment, guiding junior staff and supporting kitchen leadership to maintain elevated standards.

You will bring 3–5 years of professional kitchen experience, a culinary diploma or equivalent training, and a strong foundation in food safety, plating, and station

Qualifications

• High School Diploma or equivalent required.
• Culinary diploma or advanced culinary training preferred.
• 3–5 years of professional kitchen experience preferred.
• Experience in a luxury hotel, upscale restaurant, or high-volume environment preferred.
• Experience working multiple stations and supporting junior culinary staff preferred.

Responsibilities

• Prepare, cook, and present complex menu items according to recipes, plating guidelines, and chef direction.
• Execute advanced culinary techniques with precision and consistency.
• Ensure all dishes meet luxury standards for taste, temperature, and presentation.
• Prepare and monitor sauces, soups, proteins, and specialty items as assigned.
• Independently operate and oversee assigned stations with focus on timing, quality and efficiency.
• Support production across restaurants, banquets, special events, and in-room dining.
• Assist with station setup, prep planning and coordination for service readiness.
• Monitor inventory levels, product freshness, and station organization.
• Participate in daily lineups, production meetings, and kitchen communication.
• Assist Sous Chefs and leadership with daily production needs and task delegation.
• Provide direction, training, and support to Cook, Cook II, and junior staff.
• Promote a collaborative and high-performing kitchen environment.
• Ensure proper food handling, labeling, storage, and FIFO practices.
• Maintain a clean, organized, and safe workstation; follow HACCP and safety policies.
• Perform other duties to support hotel operations.
