Position Summary

Takes lead in the kitchen and is in charge of all food production. Responsible for overseeing product quality, cleanliness, and profitability of food service outlets to ensure smooth and efficient guest service. Maintains interdepartmental communication and interacts daily with guests and resort staff.

Reports to: Food & Beverage Director / Executive Chef

Education & Experience
  • Post-secondary culinary arts training program degree highly desirable
  • Minimum of one (5) year previous food preparation experience required
Essential Duties
  • Lead in the preparation process to ensure food and products are consistently high quality and presented well.
  • Prepare and complete menu items per order, plating and garnishing cooked items in a timely fashion.
  • Ensure buffets are set and maintained properly.
  • Supervise all kitchen employees, including cooks and dishwashers.
  • Collaborate with the Food & Beverage Director to complete administrative duties (staff scheduling, payroll, food orders, inventory, costing, recipe specification, and menu development). Ensure all BOH staff have a current Minnesota ServSafe certificate.
  • Assist in interviewing, hiring, and training of all BOH staff as dictated by the organizational structure.
  • Control expenses by producing only what is needed and preparing items correctly the first time.
  • Label, rotate, and store all products; keep coolers and storage areas organized.
  • Assign stations and tasks to staff; ensure cleanliness of BOH areas.
  • Receive and organize all BOH F&B products; check for quality, specs, and quantities.
  • Maintain a daily/weekly/monthly cleaning schedule for all kitchen areas and equipment; uphold high sanitation and kitchen safety standards.
  • Foster positive working relationships and communication with all departments.
  • Any and all other duties as assigned.
