Lead Cook Job Description Summary

The Line Cook is responsible for preparing, cooking, and presenting food items in accordance with restaurant standards and recipes. This role requires the ability to work efficiently in a fast-paced environment while maintaining high standards of quality, cleanliness, and safety. The Lead Cook reinforces the tone for Sonesta’s Culture of Caring. We expect leaders to focus on creating amazing moments for guests and team members and dig deep to find ways to create success for their team.

Job Description

  • Test recipes for menus and food displays and provide guidelines for food presentation to Kitchen staff.
  • Monitor the quality of all food products in the kitchen to ensure standards are being met.
  • Assist in leading the Culinary Department day-to-dayoperations regarding execution and preparation of food items.
  • Execute food preparation and production. Assign specific tasks to the kitchen staff.
  • Ensure food preparation and production are done in a way that meets sanitation, safety, and quality standards.
  • Assumes responsibility for the Kitchen in absence of the Executive Chef
  • Prepares all food items for each outlet according to standard recipes and/or as specified on guest check to ensure consistency of product to the guest.
  • Ensures daily production chart is properly filled out to standards.
  • Keep all refrigeration, storage and working areas in clean, working condition to comply with Health Department regulations.
  • Ability to read and perform Use Record Specifications.
  • Ensure all equipment in working areas is clean and in proper working condition.
  • Reads and employs math skills to appropriately prepare items according to recipes.
  • Requires stamina for standing and strength for lifting and moving products.
  • Conduct regular inventory of food items and equipment.
  • Prepare and cook menu items according to recipes and quality standards.
  • Operate kitchen equipment safely and efficiently.
  • Ensure proper portioning and presentation of dishes.
  • Maintain a clean and organized workstation, adhering to sanitation and safety guidelines.
  • Collaborate with kitchen staff to ensure timely service.
  • Follow all food safety procedures and regulatory compliance.
  • Perform other duties as assigned.

Qualifications and Skills
