• Lead all banquet culinary operations for resort events, from intimate gatherings to large-scale functions.
• Ensure exceptional food quality, presentation, consistency, and flawless execution for every event.
• Collaborate with the Executive Chef on banquet menus, seasonal offerings, and culinary innovation.
• Develop creative menus reflecting current trends while meeting client expectations.
• Maintain banquet recipes and presentations with standardized procedures.
• Lead, coach, and develop banquet culinary teams including sous chefs and cooks.
• Recruit, onboard, train, and evaluate banquet talent; promote teamwork and accountability.
• Forecast staffing needs based on event volume and manage labor productivity.
• Monitor production to minimize waste and maintain cost controls.
• Maintain HACCP, ServSafe, and health regulation compliance; ensure sanitation and organization.
• Lead daily production meetings and ensure open communication across departments.
• Review banquet event orders, develop production schedules, and manage staffing plans.
• Perform payroll edits and labor reporting; conduct inventories and cost analysis.
• Participate in budget planning and annual business reviews.
