Description
We are hiring a Kitchen Manager!
Responsibilities:
- Train all kitchen associates to perform their duties effectively.
- Write schedules, evaluate, and oversee all personnel.
- Ensure all food served is high quality, properly prepared according to recipes, and efficiently delivered to outlets, including working the line during peak times.
- Supervise the entire kitchen staff, utility, and sanitation associates, providing guidance, support, and counseling.
- Ensure proper preparation and service of all banquets, focusing on timing, portions, and quality.
- Maintain effective communication between banquets and the kitchen.
- Maintain sanitation standards across all areas, including walk-ins, freezers, kitchen, and equipment.
- Manage food costs, kitchen labor, and related expenses to meet financial goals.
- Refer to Standard Operating Procedures for guidance.
- Ensure a safe work environment by following safety and security protocols.
- Operate all kitchen equipment proficiently.
- Communicate daily expectations to the kitchen team for smooth operations.
- Follow and maintain cleaning schedules.
- Address problems promptly as they arise in the kitchen.
- Participate in staff meetings and the MOD program.
- Assist in setting goals, standards, and objectives to enhance the organization’s reputation and profitability.
- Provide staff with necessary tools and equipment.
- Maintain records such as roast meat charts and recipe cards.
- Prepare recipe cards and visual presentations for menu items.
- Submit payroll hours timely to HR/Accounting.
- Oversee all operational areas, including frontline, banquets, and plating.
- Ensure availability and maintenance of service equipment and supplies.
- Staff the kitchen appropriately to ensure coverage without waste.
- Taste and check the quality of steamed items, soups, sauces, etc., during all meal periods.
- Prepare adequately for all meal periods, minimizing waste.
- Follow approved recipes without deviation.
- Maintain standards for storage, rotation, production, portions, and quality, reporting issues to the Food & Beverage Manager.
- Adhere to procurement policies via Purchasing Concepts.
- Understand and conform to budget requirements, addressing discrepancies.
- Interview and hire new staff as needed.
- Ensure policies on coaching, counseling, and discipline are followed and documented.
- Evaluate staff performance periodically.
- Uphold high standards of professionalism.
- Develop performance standards, procedures, and safety rules.
- Memorize recipes and preparation instructions.
- Handle and operate dangerous kitchen equipment safely.
