Job summary

Pamunkey Regional Jail is seeking a candidate to oversee routine food service management within a correctional facility. You will report to the Food Services Manager and supervise inmate workers while ensuring meal preparation, serving, and sanitation meet required standards.

Responsibilities include training inmates, maintaining inventories, and ensuring security of the kitchen after each shift. Must be able to lift up to 30 pounds and work with a non-exempt schedule.

Qualifications

• Knowledge of FDA nutritional requirements and State Health Department guidelines as applied to food service
• Ability to interpret menus and recipes and estimate food quantities
• Ability to communicate effectively both orally and in writing
• Ability to read and understand menus, recipes and related documents

Responsibilities

• Supervise the preparation, cooking and serving of meals for staff and incarcerated individuals, including training of inmate workers
• Maintain kitchen cleanliness and equipment
• Enforce sanitation and cleaning standards for kitchen operations
• Ensure meals meet nutritional and Department of Health standards
• Ensure proper portioning of food according to guidelines
• Direct inmate staff on a daily basis
• Supervise safe use of kitchen equipment
• Secure the kitchen at the end of each shift
• Compile and maintain utensil inventory
• Maintain proper storage and handling of food
