Job summary

You will manage inventory, ensure quality, and supervise staff, including inmate workers, while maintaining high sanitation and safety standards.

The role requires a high school diploma or equivalent, with preferred culinary training and prior experience in large-scale food production or correctional kitchen settings.

Qualifications

• Prior food service management or quantity food production experience preferred.
• Experience in sanitation and safety standards in a kitchen environment.
• Ability to train and supervise staff, including inmate/detainee workers.

Responsibilities

• Prepare large quantities of meats, fish, gravies, cereals, soups, and vegetables according to menu plan.
• Manage inventory; place and receive orders for food and supplies.
• Ensure food quality and schedule preparations.
• Guide and train employees to maintain standards.
• Maintain high standards of sanitation and safety.
• Train inmate/detainee food service workers and inspect their work.
