Overview
The Steward/Dishwasher is responsible for maintaining cleanliness and proper storage of all china, glass, and silverware, ensuring the highest standards of sanitation. He/she assists kitchen staff in maintaining cleanliness of the kitchen and storage areas, and helps with food storage and rotation.
Responsibilities
- Maintain cleanliness and orderliness in kitchens, back dock, dumpster, and utility areas.
- Perform heavy-duty cleaning of ovens, grills, sinks, walls, floors, walk-in refrigerators, freezers, and other kitchen equipment.
- Wash pots, pans, and utensils following proper sanitation procedures; vacuum carpeted areas in food and beverage outlets.
- Sweep, mop, and wash floors in food and beverage areas, kitchens, and docks.
- Inform management of shortages of equipment and supplies.
- Operate dishwashing equipment to ensure thorough cleaning and sanitation.
- Store all cleaned china, glass, and silverware properly, minimizing breakage.
- Handle chemicals safely and correctly.
- Report faulty equipment immediately.
- Empty garbage into the hotel dumpster.
- Know the location and operation of fire extinguishing equipment.
- Practice safe work habits to prevent injuries.
- Follow procedures for cleaning and reassembling kitchen equipment.
- Follow sanitation standards.
- Assist in setting up and breaking down the restaurant buffet as needed.
- Support banquet operations by supplying necessary china, glass, and silverware.
Qualifications
- High School diploma or equivalent preferred; hotel or related experience is a plus.
- Flexibility to work long hours and handle heavy lifting (up to 100 pounds occasionally).
- Ability to stand for entire shifts and withstand temperature variations.
- Maintain a friendly demeanor and effective communication skills.
- Ability to multitask, prioritize, and attend training sessions.
- Maintain high standards of personal appearance and grooming.
- Adhere to hotel standards, safety regulations, and operational procedures.
- Show initiative and problem-solving skills.
- Cross-train in other hotel areas as needed.
