Overview

The Steward/Dishwasher is responsible for maintaining cleanliness and proper storage of all china, glass, and silverware, ensuring the highest standards of sanitation. He/she assists kitchen staff in maintaining cleanliness of the kitchen and storage areas, and helps with food storage and rotation.

Responsibilities

1. Maintain cleanliness and orderliness in kitchens, back dock, dumpster, and utility areas.
2. Perform heavy-duty cleaning of ovens, grills, sinks, walls, floors, walk-in refrigerators, freezers, and other kitchen equipment.
3. Wash pots, pans, and utensils following proper sanitation procedures; vacuum carpeted areas in food and beverage outlets.
4. Sweep, mop, and wash floors in food and beverage areas, kitchens, and docks.
5. Inform management of shortages of equipment and supplies.
6. Operate dishwashing equipment to ensure thorough cleaning and sanitation.
7. Store all cleaned china, glass, and silverware properly, minimizing breakage.
8. Handle chemicals safely and correctly.
9. Report faulty equipment immediately.
10. Empty garbage into the hotel dumpster.
11. Know the location and operation of fire extinguishing equipment.
12. Practice safe work habits to prevent injuries.
13. Follow procedures for cleaning and reassembling kitchen equipment.
14. Follow sanitation standards.
15. Assist in setting up and breaking down the restaurant buffet as needed.
16. Support banquet operations by supplying necessary china, glass, and silverware.

Qualifications

1. High School diploma or equivalent preferred; hotel or related experience is a plus.
2. Flexibility to work long hours and handle heavy lifting (up to 100 pounds occasionally).
3. Ability to stand for entire shifts and withstand temperature variations.
4. Maintain a friendly demeanor and effective communication skills.
5. Ability to multitask, prioritize, and attend training sessions.
