Job summary

Highgate Hotels in Fort Walton Beach is seeking a Cook to prepare food across Restaurants, Room Service, Employee Cafeteria and Banquets using standardized recipes. Maintain cleanliness, sanitation, and safety in the kitchen while minimizing waste and maximizing cost efficiency.

The role requires culinary experience, ability to stand for long periods, flexible hours, and knowledge of hotel-standard procedures.

Qualifications

• High School diploma or equivalent; hotel/kitchen experience preferred.
• Culinary experience required.
• Flexible, long hours sometimes required.
• Medium work - up to 50 pounds of force occasionally, and/or 20 pounds frequently to lift, carry, push, pull, or otherwise move objects.
• Ability to stand during entire shift.
• Knowledge of menus and the preparation required, according to hotel standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.
• Knowledge of herbs and spices and proper use of each.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Complete necessary food and station preparation prior to opening to serve guests promptly.
• Prepare and display buffet food items according to hotel standards.
• Recognize quality standards in fresh vegetables, fish, dairy and meat products.
• Maintain clean and sanitary environment with proper handling, storage, and sanitation.
• Prepare food for Banquets per Banquet Event Orders.
• Prepare and service food for the Employee Cafeteria as directed by the Chef.
• Follow all Health Department and Company regulations for food safety and storage standards.
