Responsibilities

• Self-starter with ability to make independent decisions when necessary.
• Manage the dietary department in the absence of the dietary manager and act as supervisor when needed.
• Understand and comply with local, state, and federal dietary regulations (sanitation, patient care, labor, safety, disaster).
• Maintain a safe, sanitary dietary department and report problems to the dietary manager.
• Conserve supplies, prevent waste, and report needs for food, supplies, and equipment to the dietary manager.
• Receive and store food and supplies; date, label, and store items; use proper handling techniques.
• Review menus/recipes; prepare meals and serve diets as planned with proper portions and special diets.
• Follow standardized recipes and prepare sufficient quantities to meet service requirements.
• Test and taste foods; adjust for appearance, flavor, aroma, and temperature.
• Coordinate timing of meal preparation to meet service schedules.
• Portion food on trays; check diet accuracy and deliver to floors; assist with tray line deliveries.
• Record substitutions; note substitutions when needed; garnish according to patient/resident preferences.
• Attend in-service training; keep work area clean; ensure sanitation of kitchen/equipment.
• Communicate with staff, patients, and families.
• Process diet orders and update tray cards in the absence of the dietary manager.
• Adhere to dress code for the department.
• Performs other tasks as required.
