The Westin Fort Lauderdale Beach Resort, operated by HEI Hotels & Resorts, seeks a garde manger supervisor to lead cold presentations, prep appetizers, salads, and decorative plating for banquets. You will coordinate with executive and sous chefs during events and ensure quality and safety standards.

Requirements include 2-3 years culinary experience in hotel/resort, strong knife skills, ability to lift up to 100 lbs, and effective verbal and written communication.

Qualificações

• 2-3 years culinary experience in hotel, resort or cruise ship.
• Finger/hand dexterity to operate food machinery.
• Ability to grasp, lift and/or carry up to 100 lbs with or without accommodation.
• Effective verbal and written communication skills.

Responsabilidades

• Communicates with Executive Chef / Sous chefs for events and requirements.
• Plans production and maintains records for garde manger per menu or special requirements.
• Develops and implements recipes and methods for garde manger staff.
• Plans menus and utilizes surpluses and leftovers with banquet considerations.
• Estimates food consumption and requisitions items and supplies.
• Trains and supervises staff to meet quality standards on schedule.
