An established industry player is seeking a dedicated Kitchen Supervisor to oversee inmate kitchen operations. This role involves supervising the preparation of over 6,500 meals daily while ensuring adherence to high standards of food safety and sanitation. Supervises the activities of inmate kitchen workers. Coordinates the preparation and cooking through the supervision of inmate kitchen worker cooks and helpers. Responsible for overseeing all other inmate kitchen workers in carrying out their duties under the guidance of the Director or Assistant Director of Food Services. Completes assigned tasks and projects, such as conducting in-service training for Food Service personnel and inmate kitchen workers on principles of proper food handling, sanitation, safety, and hygiene. May fill in for the Assistant Director of Food Services as required.
Meal Preparation: Responsible for preparing meals during each meal period—breakfast, lunch, and dinner. All meals must meet established standards of preparation, presentation, and sanitation.
Sanitation Standards: Ensure all kitchen staff practice good sanitation. Coordinate and supervise sanitation procedures, possibly communicating with other departments to support kitchen sanitation practices.
Supervision of Inmate Kitchen Workers: Supervise inmate kitchen staff responsible for preparing over 6,500 meals daily for staff and inmates. Motivate and direct inmates to complete each meal service successfully while maintaining institutional security.
Adherence to Facility SOPs: Perform duties in accordance with Facility Standing Operating Procedures, adapting to unusual events while ensuring timely and satisfactory meal preparation. Maintain high standards for oneself and the inmate kitchen staff.
Equipment Maintenance: Ensure equipment is used properly, maintained, and repaired as needed. Maintain equipment to high standards to prevent injuries and ensure effective sanitation.
