Responsibilities include directing inmate workers, ensuring proper portions, and following HACCP food-handling policies while maintaining daily production logs and security procedures.

Qualifications

• Must be over 18 years of age.
• Minimum of one year of food prep or related work preferred.
• Previous supervisory experience preferred.
• Previous experience interacting with inmates is a plus.
• Ability to motivate and supervise inmates and/or team members in a correctional environment.
• Must be able to obtain a food safety certification.
• Ability to work independently with limited supervision.
• Ability to exercise good judgment and tact.
• Must follow safety procedures and policies and maintain security clearance.

Responsibilities

• Adhere to and maintain preparation and production guidelines by reviewing and approving production and temperature logs.
• Supervise inmates in food preparation and tray assembly.
• Ensure timely, efficient meal service and compliance with Aramark guidelines.
• Participate in preparation and serving of meals.
• Prints and distribute recipes.
• Direct inmates in using Aramark recipes and train on proper cooking procedures.
• Ensure proper portions and accommodate dietary requirements.
• Obtain daily population counts and review with staff.
• Adhere to security policies; keep storage areas locked and secured.
• Ensure kitchen tools/equipment are returned to secure areas; keys secured.
• Determine work procedures, schedules, and sanitation routines with staff adherence.
• Assist in inventory, receiving, and storage of food; requisition orders as needed.
• Participate in preparation and postproduction processes and storage of meals.
• Follow HACCP policies for food handling and storage.
