Job description

The incumbent of this position supervises others while performing work of complex food preparation on a large-scale, commercial-type basis. Ensures adherence to high quality standards and sanitation procedures.

Essential Job Functions:

  1. Plan menus including serving size proportions and minimum levels of caloric nutritional intake.
  2. Conduct inventories as needed to ensure meal preparation.
  3. Maintain a “Daily Menu Substitution Log” and file menus for at least the past thirty (30) days.
  4. Supervise kitchen and dining room clean-up.
  5. Purchase food and necessary supplies within budgetary requirements.
  6. Maintain compliance with all regulatory bodies (e.g., Health Department, CSTAR, DOA).
  7. Maintain records to satisfy the requirements of the USDA’s Free & Reduced Meal Program.
  8. Monitor food temperatures.
  9. Ensure staff evaluations are completed timely and communicate effectively with staff.
  10. Schedule staff for appropriate coverage.
  11. Demonstrate interest in long-term and short-term organizational goals.
  12. Perform other duties as assigned by the Executive Team.

Knowledge, Skills, and Abilities:

  • Thorough knowledge of large-scale food preparation and cooking methods.
  • Knowledge of materials and equipment used in large-scale cooking.
  • Effective oral and written communication skills.
  • Ability to follow security and safety regulations.

Experience and Education Qualifications:

  • At least one (1) year of responsible employment history.
  • Minimum of one (1) year paid experience in food preparation.
  • At least one (1) year supervisory experience.

Supervisory Requirements:

  • Communicate organizational strategy and encourage team participation.
  • Provide leadership and guidance across all department aspects.
  • Monitor strategic objectives and involve team members in goal achievement.
  • Communicate changes and news effectively.
  • Handle difficult personnel situations with discretion and HR consultation.
  • Champion organizational change and support new initiatives.
  • Reinforce a team approach and solicit input at all levels.

Employment Requirements:

  • Successful background check, including criminal, driving, abuse/neglect, and fingerprint checks.
  • Completion of New Hire Orientation and ongoing training (Relias).
  • Valid driver’s license, acceptable driving record, and auto insurance.
  • Provide evidence of being free from infectious and contagious diseases, such as TB, before and during employment.

Physical Requirements:

Sedentary work involving exerting up to 10 pounds of force occasionally and performing repetitive hand, finger, and arm movements. Sitting most of the time, with occasional walking or standing.
