Job summary

Qualifications

• High school diploma or equivalent required.
• Minimum of three (3) years managing a food service operation in a commercial, military, or institutional facility and one year of relevant undergraduate credits or technical training.
• Minimum of one (1) year warehousing experience strongly preferred.
• Demonstrates effective personnel interactions, communication skills, and problem-solving techniques.
• Proficiency with computer systems preferred.
• Knowledge of sanitation and cleanliness in quantity food production is required.

Responsibilities

• Review daily menus and order food and supplies.
• Supervise all activities (handling, preparation, storage, equipment maintenance, cleanliness) and ensure quality.
• Ensure serving line operates efficiently and meets temperature controls.
• Decide what to discard and what to save for leftovers.
• Manage detainee food service staff, train them, and inspect performance.
• Ensure detainee and staff follow sanitation, safety, and portion rules.
