Job summary

Calder Casino in Miami Gardens, FL, is seeking a Food & Beverage Supervisor to oversee day-to-day kitchen operations across outlets, ensuring safety, cleanliness and exceptional service. The role requires flexibility to fit the operation and experience in F&B supervision, event setup, and staff management.

Qualifications

  • High school diploma or GED equivalent.
  • 3+ years of experience in food preparation and food knowledge preferred.
  • Ability to work the line in multiple stations (Sauté, Broiler, Appetizer, etc.).
  • Must be able to obtain any required classes or certifications.
  • Ability to obtain a valid gaming license.

Responsibilities

  • Supervises cleaning and maintenance of equipment and advises Outlet Managers about repairs.
  • Operates kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and griddles.
  • Reads recipes and measurements; ensures accuracy in portions and timing.
  • Communicates effectively in English with team members and supervisors.
  • Addresses customer complaints promptly and resolves issues.
  • Coordinates with staff to cook, prepare, dish-out, and assemble all outlets' food.
  • Controls food costs and maintains quality standards.
  • Ensures sanitation and nutrition practices are followed by kitchen staff.
  • Prepares food items according to recipes to ensure consistency.
  • Creates sauces and derivatives of mother sauces.
  • Prepares written food requisitions for supplies and inventory.
  • Monitors staffing to meet budgeted levels and delegates accordingly.
  • Ensures safety and security of employees and guests; reduces losses.
  • Other duties as assigned.

JOB SUMMARY

Calder Casino is an energetic, growing organization that is looking for talented customer service driven individuals to join the team. We are devoted to creating Winning Experiences for our teammates, guests, and partners. We are seeking a passionate leader to join our Food and Beverage operation to ensure efficiency, safety, cleanliness, and exceptional service. As an F&B Supervisor, this person will be responsible for the day-to-day operations of many outlets and must be flexible with their schedule to fit our operation. Experience with F&B operation supervision, event set up, health and safety regulations, and employee management would be highly desirable to be successful in this role.

ESSENTIAL DUTIES AND RESPONSIBILITIES
  • Supervises cleaning as well as maintenance of equipment and advises Outlet Managers about repairs.
  • Ability to operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and griddles.
  • Requires reading and math skills for recipes and measurements.
  • Ability to read, write, speak and understand basic English to read recipes and communicate with other team members.
  • Responsible for attending to customers’ complaints and/or issues resolving matters as expediently as possible.
  • Actively participates with staff to cook, prepare, dish-up and assemble all outlets food.
  • Adheres to control procedure for food costs and quality.
  • Verifies that all sanitation and nutrition practices are maintained by kitchen staff.
  • Prepares all food items according to standard recipes and menu to ensure consistency of product to the guest.
  • Be able to create compound sauces and derivatives of the mother sauces.
  • Prepare written food requisition for supplies and food items for production in the workstation – inventory.
  • Verifies that all portion sizes, quality standards, departmental rules, policies, and procedures are maintained by kitchen staff, and supervises the production of all food items.
  • Monitor staffing levels to maintain budgeted levels of employment. Delegate authority and assign responsibilities.
  • Ensure the safety and security of employees and guests. Implements programs and processes to reduce loss time injuries.
  • Other duties as assigned.
REQUIRED SKILLS AND ABILITIES
  • Abilities demonstrated in handling the banquets and food outlet effectiveness.
  • Be in constant communication with the Food & Beverage Manager.
  • Maintaining interpersonal working relationship among all personnel – create an environment of development and learning.
  • Oral and written communication skills.
  • Ability to perform all duties at a higher level of accuracy and speed than a Cook I.
  • Willingness to assume overall responsibility relative to the performance of the department, work flexible hours and handle high pressure deadlines.
EDUCATION AND EXPERIENCE
  • High School Diploma or GED equivalence.
  • Three-year minimum experience in food preparation and food knowledge is preferred.
  • Ability to work the line in different locations i.e. Sauté, Broiler, Appetizer, Pantry, Pasta, Grill etc.
  • Must be able to complete any classes or certifications required.
  • Ability to obtain a valid gaming license.
