Gianni’s Restaurant at The Villa Casa Casuarina seeks a Food and Beverage Captain (Assistant Manager) to lead front-of-house operations and support an elevated wine program. You will drive guest experiences through strong leadership and service excellence.

Responsibilities include supervising staff, coordinating with kitchen and bar, managing wine and sake service, and maintaining cellar organization. Flexibility for evenings, weekends and holidays is required.

Qualifications

• Experience as Captain or supervisor in fine dining.
• Strong knowledge of wine, sake and food pairings.
• Proven leadership, communication and guest service skills.
• Able to work in the evenings, weekends and holidays.

Responsibilities

• Lead and support front-of-house team to maintain high service and hospitality standards
• Provide attentive, personalized guest service and handle concerns with professionalism
• Coordinate with kitchen, bar, and management to ensure smooth service flow
• Execute and support wine and sake service, including proper presentation and timing
• Maintain organization and stock of wine cellar, sommelier stations, and service areas
• Monitor inventory levels, assist with ordering, and communicate low or 86’d items
• Oversee liquor and wine inventory management, including monthly inventory counts and weekly ordering
• Train and guide staff on menu knowledge, wine pairings, and service standards
• Ensure dining room cleanliness, setup, and adherence to grooming standards
