Job description

We are seeking an experienced, hands-on Bar Manager to lead bar operations at Conniption Cocktails & Cuisine, located inside Raleigh-Durham International Airport (RDU).

The ideal candidate is a strong leader with extensive bartending and bar management experience who understands how to operate a successful, high-volume bar. This individual must be knowledgeable in cocktail preparation, liquor inventory management, cost control, staff training, and delivering exceptional guest service.

We are looking for someone who can take ownership of the bar's daily operations, establish consistency in drink quality and service, develop a strong bartending team, and contribute to the restaurant's overall profitability.

This position works closely with the General Manager and restaurant leadership team to maintain operational standards, improve efficiency, and create a positive experience for both guests and employees.

Key Responsibilities

Bar Operations & Management

  • Oversee daily bar operations, ensuring efficient service, consistent drink quality, and a positive guest experience.
  • Maintain a well-organized, clean, and fully stocked bar that operates efficiently during high-volume periods.
  • Establish and enforce proper procedures for drink preparation, presentation, portion control, and service.
  • Ensure all cocktails and beverages are prepared consistently according to approved recipes and brand standards.
  • Monitor bar performance and identify opportunities to improve service, productivity, and profitability.
  • Ensure compliance with all applicable alcohol service regulations, health standards, and company policies.

Inventory Management & Cost Control

  • Conduct regular liquor, beer, wine, and bar supply inventories, ensuring accurate counts and reporting.
  • Monitor liquor usage, product waste, overpouring, and inventory discrepancies.
  • Manage ordering and maintain appropriate inventory levels based on sales volume and operational needs.
  • Implement controls to minimize product loss, unnecessary expenses, and inventory shrinkage.
  • Monitor beverage costs and work with management to achieve established cost and profitability goals.
  • Review beverage sales, inventory reports, and financial performance to identify areas for improvement.

Staff Training & Development

  • Train bartenders on proper cocktail preparation, measurements, pouring techniques, garnishing, and presentation.
  • Ensure all bartenders understand and consistently follow approved drink recipes and portion standards.
  • Coach and develop bartenders to improve speed, accuracy, product knowledge, and overall service.
  • Establish clear expectations for bar setup, breakdown, cleanliness, and daily responsibilities.
  • Monitor employee performance, provide constructive feedback, and hold team members accountable.
  • Assist with interviewing, hiring, onboarding, and training new bar employees.
  • Foster a professional, positive, and team-oriented work environment.

Guest Experience & Leadership

  • Lead by example and maintain a visible, hands-on presence during service.
  • Ensure guests receive prompt, friendly, and professional service, even during peak airport travel periods.
  • Address guest concerns and resolve service issues promptly and professionally.
  • Collaborate with the General Manager and other restaurant leaders to maintain smooth front-of-house operations.
  • Assist with staff scheduling and labor management to ensure appropriate coverage while controlling labor costs.
  • Identify opportunities to increase beverage sales through product knowledge, suggestive selling, and improved service.
  • Maintain accountability for operational standards, employee performance, and overall bar profitability.
Qualifications & Experience

Required Qualifications

  • Minimum 2 years of bar management or supervisory experience in a high-volume restaurant, bar, or hospitality environment.
  • Strong hands‑on bartending experience with extensive knowledge of spirits, beer, wine, and cocktail preparation.
  • Demonstrated experience conducting liquor inventory, managing beverage costs, and controlling product waste.
  • Proven ability to train bartenders on proper drink preparation, standardized recipes, and pouring techniques.
  • Strong understanding of bar operations, ordering, inventory controls, and profitability.
  • Excellent leadership, communication, organizational, and problem‑solving skills.
  • Ability to work efficiently in a fast‑paced, high‑volume environment.
  • Experience managing employees, providing coaching, and holding teams accountable.
  • Ability to work a flexible schedule, including early mornings, evenings, weekends, and holidays as needed.
  • Ability to meet airport security and badging requirements.

Preferred Qualifications

  • Previous management experience in an airport, hotel, upscale casual restaurant, or high‑volume cocktail bar.
  • Experience reviewing beverage sales reports, managing budgets, and understanding profit and loss (P&L) statements.
  • Experience developing cocktail menus, implementing beverage promotions, or improving beverage sales.
  • Familiarity with restaurant POS systems and inventory management software.
  • Responsible alcohol service certification or ability to obtain certification.
