Job summary

The Marquesa Hotel, featuring Cafe Marquesa, is seeking a Line Cook to join our award-winning restaurant in Old Town Key West. You will work with Café Marquesa team to prepare and cook menu items to precise recipes and ensure the station stays stocked and clean during service.

Our dining concept features Contemporary American cuisine with Southern influences, and a 6-course tasting menu is available. Prior restaurant cooking experience is valued, with fine dining experience a plus.

Qualifications

• Previous cooking experience in a restaurant.
• Fine dining experience is a plus.

Responsibilities

• Prepare and cook menu items to specific recipes.
• Set up and stock station with ingredients and supplies.
• Maintain and sanitize workstation throughout shift.
• Follow recipe and yield guidelines.
• Notify Sous Chef of any shortages.
• Report to the executive or sous chef and follow their instructions.
• Ensure all dirty pots and pans are washed at the pot wash station.
• Close the workstation at end of shift.
• Wrap, cover, vent, and label/dated food items.
• Ensure proper food handling and storage per sanitation requirements.
• Know menu items and specials to serve guests the best product.
• Organize and sanitize work areas and kitchen equipment.
• Additional duties as assigned.
