Job summary

California State University, Fullerton seeks a Desert Studies Lead Cook (Cook II Lead) to plan, organize, and oversee meals for guests at the remote field station near Zzyzx. On-site housing is provided; weekend and on-call duties may apply.

The role requires leading a kitchen team, ensuring sanitation and safety, and coordinating meals for up to 250 people per service period. A background check is mandatory.

Qualifications

• Equivalent to one year of experience as Cook I Lead or two years in a lead capacity over cooks and/or food service workers.
• Working knowledge of kitchen sanitation and safety; food handling and storage of large quantities.
• Ability to plan menus and instruct others in proper food handling and cleanup techniques.
• Background check including criminal records is required for employment.

Responsibilities

• Plan, organize, and oversee preparation, cooking, and dispensing of food.
• Maintain hygienic, safety, and sanitation standards; monitor supplies and inventory.
• Train and supervise kitchen staff; manage ordering and budgeting within a set budget.
• Provide instruction and problem solve in a remote field station environment.
