Job summary

MGM Grand Las Vegas is seeking a F&B Safety & Sanitation Manager to lead the food safety and sanitation program across all outlets. You will partner with culinary teams to uphold world-class safety standards and protect guests while elevating dining experiences.

Responsibilities include regulatory compliance, internal inspections, and delivering food safety training. A related degree and F&B experience in a hotel/casino setting are preferred.

Qualifications

• Bachelor's degree or related field preferred.
• 1+ year of food and beverage experience preferred.
• ServSafe/ANSI-certified Food Safety Manager Instructor/Proctor preferred.
• Proficiency with MS Office (Word, Excel, PowerPoint) preferred.
• Experience in F&B in a major hotel/casino or resort setting preferred.

Responsibilities

• Ensure compliance with all government regulations for permitted facilities.
• Maintain health district food regulations and MGM Resorts standards.
• Conduct internal inspections of pantries, bars, kitchens, and lounges.
• Coach staff on food safety, sanitation and personal hygiene.
• Collaborate with departments and external regulatory agencies as needed.
