Job Description

Omni PGA Frisco Resort is hiring an Executive Sous Chef | Trick Rider to join our team. Omni Frisco PGA Resort offers North Texas 127,000 sq ft of event space, 13 food and beverage outlets, a luxurious spa, and a full entertainment district. Featuring two championship 18-hole golf courses and a third short course, we provide excellent options for dining, events, and entertainment.

Trick Rider is a new age supper club serving luxury curated food and innovative cocktails, wines, and spirits. An experiential venue with swagger, it features top-shelf seafood, shellfish, and premium meats. Guests can sit ringside at the chef’s table or at the horseshoe bar. It’s a performance that honors tradition with a modern twist.

The Sous Chef will provide technical and administrative support to the Executive Sous Chef, ensuring smooth kitchen operations and food production.

Responsibilities
  • Manage daily food production, preparation, and presentation to ensure quality and consistency in accordance with Omni standards.
  • Lead and develop kitchen associates through scheduling, training, coaching, and performance reviews. Focus on attracting, interviewing, retaining, and motivating staff while maintaining a safe work environment.
  • Monitor and control labor and food costs; prepare reports and schedules to meet or exceed budgets while maintaining quality.
  • Assist in creating, costing, and implementing menus for outlets, banquets, and seasonal events.
  • Schedule staff according to business needs and budgets.
  • Support food and beverage outlet functions with kitchen support.
  • Oversee proper handling of food returns and sanitation of kitchen facilities and equipment.
  • Ensure compliance with health and safety standards, including EcoSure and sanitation codes.
  • Maintain all kitchen equipment and walk-in coolers in good working order and cleanliness.
  • Communicate expectations clearly to staff and ensure they are executed properly.
  • Support efforts to achieve our Medallia food quality score.
  • Manage sign-in and sign-out procedures for kitchen staff.
  • Perform other related duties as assigned.
Qualifications
  • Previous culinary leadership experience required.
  • Creativity and knowledge of current food trends.
  • Proven leadership skills with the ability to train, develop, and motivate staff.
  • Ability to interact courteously with guests and internal teams, and resolve requests effectively.
  • Experience managing schedules, inventory, payroll, service recovery, and employee relations.
  • Excellent verbal and written communication skills in English.
  • Strong organizational skills with multitasking ability in a fast-paced environment.
  • Proficiency in using culinary tools and taste/smell skills.
  • Serve Safe certified food manager.
  • Ability to lift up to 40 lbs, stand for extended periods, and perform physical tasks.
  • Flexible availability, including weekends and holidays.
