Job Description

Omni PGA Frisco Resort seeks an Executive Chef | Trick Rider to lead the culinary team for Trick Rider, a new age supper club. This key role involves overseeing the kitchen and food production for our flagship restaurant, ensuring efficient and high-quality service at the Omni PGA Frisco Resort.

Trick Rider is a modern supper club serving curated, luxury cuisine and innovative cocktails, wines, and spirits. It features premium seafood, fine meats, and a vibrant atmosphere with chef’s tables and a lively bar, paying homage to tradition with a contemporary twist.

Responsibilities
  • Manage daily food production, preparation, and presentation, maintaining quality and consistency per Omni Standards.
  • Lead, train, develop, and motivate kitchen staff; conduct performance reviews; foster a safe work environment.
  • Inspect all food service areas during operations to ensure standards are met.
  • Monitor and control labor and food costs; prepare reports to meet or exceed budgets while maintaining quality.
  • Collaborate with the resort executive chef on menu creation, costing, and implementation.
  • Schedule staff according to budget and forecasted business needs.
  • Ensure proper sanitation and maintenance of all kitchen facilities and equipment.
  • Comply with health and safety standards, including EcoSure requirements.
  • Maintain all kitchen equipment and walk-in coolers, ensuring cleanliness and proper food rotation.
  • Advise the resort executive chef on kitchen matters, uphold cleanliness and hygiene standards.
  • Ensure guest satisfaction through smooth daily operations.
  • Control purchasing and receiving standards in coordination with the storeroom manager and food & beverage controller.
  • Test and evaluate products for quality, yield, and wastage.
  • Ensure staff understand and meet performance expectations.
  • Support efforts to achieve Medallia food quality scores.
  • Manage sign-in/sign-out procedures for kitchen staff.
  • Perform other related duties as assigned.
Qualifications
  • Minimum 2 years of culinary management experience; upscale, full-service five Diamond experience preferred.
  • Excellent customer service skills; administrative experience is a plus.
  • College or culinary degree preferred.
  • Proficiency in Microsoft Word, Excel, Delphi, or similar programs.
  • Food Handler’s certification (must be obtained if not already held).
  • Strong communication skills, both written and verbal.
  • Excellent organizational skills.
  • Flexible schedule including nights, weekends, and holidays.
