What you will do:

  • Open and close the kitchen line, perform precise line checks and facility walks, and document EcoSure standards to ensure compliance and address deficiencies.
  • Manage high-volume service periods from the expo or wheel position to maintain food quality and presentation standards.
  • Collaborate with BOH and FOH teams to perform line checks, facility walks, and manage inspections, ensuring a safe production environment.
  • Hire, develop, and manage back-of-house employees, including scheduling and payroll reporting in accordance with company standards and legal requirements.
  • Partner with EC to manage P&L, focusing on maximizing profits through food cost control, labor management, and inventory control.
  • Assist with ordering and invoicing of products.
  • Maintain open communication with the FOH team to ensure adherence to TFK guidelines.
  • This role typically involves a 50-hour work week over 5 days, with flexibility based on restaurant needs.

  • Have a strong passion for culinary excellence and attention to detail.
  • Are resilient under stress and capable of handling last-minute requests.
  • Have more than 3 years of experience as a chef in a high-volume, full-service restaurant.
  • Possess advanced knowledge of financial aspects of restaurant operations.
  • Are caring, self-motivated, and demonstrate leadership and coaching abilities.
