Job summary

Mazzone Hospitality, part of Compass Group USA, is seeking a Multi-Unit Executive Chef to oversee kitchen operations across multiple locations in upstate New York. You will prepare or direct the preparation of meals in accordance with corporate programs and guidelines, and maintain a safe, sanitary work environment.

Ideal candidates have 5+ years of progressive culinary/kitchen management, hands-on chef experience, and proficiency with Microsoft Office.

Qualifications

• A.S. or equivalent experience.
• 5+ years of progressive culinary/kitchen management experience.
• High volume, complex foodservice operations experience.
• Hands-on chef experience required.
• Knowledge of food and catering trends with focus on quality, production, sanitation, and cost controls.
• Proficiency with computers; MS Office suite.
• Willingness to participate in client satisfaction programs.
• ServSafe certification is highly desirable.

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; uses daily production worksheets and waste log sheets.
• Trains kitchen staff in food preparation, safe handling and sanitation to company standards.
• Establishes and maintains cleaning and maintenance schedules for equipment and work areas.
• Maintains inventory of food and supplies within guidelines.
• Manages leftover food usage within company guidelines.
• Complies with health and sanitation regulations and audits.
• Follows safety policies and participates in meetings and trainings.
