Job Summary

Working as the Executive Chef, you will be responsible for overseeing kitchen operations while maintaining a safe and sanitary work environment for the staff of Chartwells Higher Ed on the campus of LINCOLN MEMORIAL UNIVERSITY (LMU). You will prepare or direct the preparation of meals in accordance with corporate programs and guidelines. This is an exciting opportunity for an energetic, entrepreneurial Culinary professional.

Harrogate has a tight-knit community with a friendly, welcoming atmosphere. The university is a central part of the town, bringing educational and cultural opportunities. LMU competes in NCAA Division II sports, with teams known as the Railsplitters. The university offers various sports, including basketball, baseball, soccer, and volleyball. The surrounding natural beauty offers plenty of outdoor activities, including hiking, fishing, and camping. The nearby Cumberland Gap National Historical Park is a popular destination. Harrogate experiences all four seasons, with mild winters and warm summers. The area is known for its beautiful fall foliage. It's a relatively quiet and peaceful place, perfect for those who enjoy a slower pace of life. Knoxville, Lexington, KY, Chattanooga, and Nashville are surrounding big cities.

Key Responsibilities:
  1. Plans regular and modified menus according to established guidelines.
  2. Follows standardized recipes, portioning, and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.
  3. Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation based on Company and regulatory standards.
  4. Establishes and maintains cleaning and maintenance schedules for equipment, storage, and work areas. Ensures that kitchen staff follows and completes schedules as assigned.
  5. Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary products are available when needed.
  6. Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products.
  7. Complies with federal, state, and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits.
  8. Follows facility, department, and Company safety policies and procedures to include occurrence reporting.
  9. Participates and attends departmental meetings, staff development, and professional programs, as appropriate.
Preferred Qualifications:
  1. A.S. or equivalent experience.
  2. Minimum of three to five years of progressive culinary/kitchen management experience, depending upon formal degree or training.
  3. Extensive catering experience a plus.
  4. High volume, complex foodservice operations experience - highly desirable.
  5. Institutional and batch cooking experiences.
  6. Hands-on chef experience a must.
  7. Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  8. Must be experienced with computers; to include Microsoft Office (Word, Excel, and PowerPoint), Outlook, E-mail, and the Internet.
  9. ServSafe certified - highly desirable.
