Chartwells Higher Education seeks an Executive Chef to lead kitchen operations at a Needham campus. You will oversee meal preparation, safety and quality in line with corporate programs, directing culinary staff and ensuring regulatory compliance.

Qualifications

• 5+ years of progressive culinary/kitchen management experience.
• Extensive catering and high-volume foodservice experience.
• Hands-on chef experience required.
• Proficient with computers and Microsoft Office.
• ServSafe certification is desirable.

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; completes daily production worksheets and waste logs.
• Trains kitchen staff in food preparation, safety, and sanitation per company and regulatory standards.
• Establishes cleaning and maintenance schedules for equipment and work areas; ensures compliance by staff.
• Maintains inventory of food and non-food supplies within guidelines; ensures product availability.
• Manages leftovers within company guidelines and complies with health and sanitation regulations.
• Participates in departmental meetings and staff development programs.
