Job summary

Winston Hospitality seeks an accomplished Executive Chef to lead FYR Prime, a brand-new fine dining steakhouse opening inside Ho-Chunk Gaming Beloit, WI. You will craft the culinary identity, curate the menu, and set kitchen standards in a high-volume casino setting.

The ideal candidate brings proven luxury dining leadership, startup experience, and the ability to train a strong culinary team while maintaining exceptional quality and guest satisfaction from day one.

Qualifications

• Proven executive chef or comparable dining leadership experience.
• Experience opening a new restaurant in fine dining or high-check concepts.
• Casino, resort, or gaming-adjacent hospitality background preferred.
• Track record in training, motivating, and retaining culinary teams.
• Strong understanding of food and labor cost control, procurement, and inventory.

Responsibilities

• Develop and execute FYR Prime's fine dining culinary concept and menu.
• Create menus reflecting a distinctive POV while appealing to Beloit local market.
• Establish recipes, prep standards, plating specs, and QC procedures.
• Lead all kitchen operations before and after opening.
• Hire, train, and develop the culinary team.
• Foster a positive, professional, high-performing kitchen culture.
• Organize kitchen systems, prep procedures, and service standards.
• Manage food and labor costs while maintaining top quality.
• Oversee purchasing, inventory, receiving, storage, and vendor relationships.
• Maintain highest standards of food quality, sanitation, safety, and consistency.
• Collaborate with front-of-house and hospitality leadership.
• Monitor guest feedback and continuously improve the experience.
• Lead by example during service and stay actively engaged.
• Ensure compliance with health department and food-safety requirements.
