Chartwells Higher Education at Michigan Tech in Houghton, MI is seeking an Executive Chef II to lead campus dining operations and drive menu development with creativity and precision. You will be a key culinarian within our dining program, guiding daily kitchen activities and ensuring high standards in quality, portion control, and presentation.

As a senior culinary leader, you will oversee budgeting and food costing, mentor chefs and staff, maintain compliance with health and safety

Qualifications

• A.S. degree or equivalent experience.
• Three or more years of progressive culinary or kitchen management experience.
• Experience in high-volume, hands-on foodservice operations.
• Must be experienced with computers.

Responsibilities

• Plan regular and modified menus according to guidelines and recipes.
• Produce daily production worksheets and waste logs.
• Supervise and mentor chefs, cooks and staff on food prep and safety.
• Ensure culinary standards, recipe compliance and food quality.
• Lead inventory and ensure product availability.
• Enforce health, sanitation and department procedures.
• Forecast annual food and labor costs and monitor financials.
• Foster client relationships to align programs with objectives.
• Perform other duties to support dining operations.
