Arriving in Nashville from Chicago, Sushi-san will be serving up the freshest fish seven days a week. The menu from Master Sushi Chef Kaze Chan will feature signature maki, handrolls, San-Sets, nigiri, sashimi, along with Sizzling Rice, binchotan robata grilled dishes, and more. Guests can enjoy a robust sake-by-the-glass list and blast chilled beer while listening to tunes of golden-era hip-hop. This will be the fourth Sushi-san location and the first outside of Chicago.

Responsibilities:
  1. Oversee BOH operations, including purchasing standards, inventory, and food cost control.
  2. Provide leadership and guidance to teams, fostering our Culture of Caring.
  3. Research, develop, and execute seasonal menus and new items in partnership with divisional leaders.
  4. Ensure effective BOH training with divisional trainers and chefs.
  5. Conduct quarterly audits of BOH procedures and systems.
  6. Partner with chefs for purchasing and ordering.
  7. Maintain recipe books and develop recipe costing in collaboration with management.
  8. Participate in hiring, onboarding, training, and developing BOH staff.
  9. Promote teamwork and handle challenges with tact and courtesy.
  10. Work varied shifts, including early mornings, late nights, and weekends, possibly across multiple sites with overnight travel.
Physical Requirements:
  • Move and lift up to 10 pounds frequently, up to 25 pounds regularly, and up to 50 pounds occasionally.
Qualifications:
  • 5+ years of Executive Chef experience in a full-service restaurant.
  • Leadership and team development skills.
  • Proficiency in managing BOH systems.

Salary Range: USD $70,000 - $100,000 per year.
