About US

Arriving in Nashville from Chicago, Sushi-san will be serving up the freshest fish seven days a week. The menu from Master Sushi Chef Kaze Chan will feature signature maki, handrolls, San-Sets, nigiri, sashimi, along with Sizzling Rice, binchotan robata grilled dishes, and more. Guests can enjoy a robust sake-by-the-glass list, blast chilled beer, and listen to tunes of golden-era hip-hop. This will be the fourth Sushi-san location and the first outside of Chicago.

Responsibilities
  • Oversee and ensure efficient BOH operations, including purchasing standards, inventory, and food cost control
  • Provide leadership to staff while fostering our Culture of Caring
  • Research, develop, and implement seasonal menus and new items in collaboration with divisional leaders
  • Ensure effective BOH training with divisional trainers and chefs
  • Conduct quarterly audits of BOH procedures and systems
  • Collaborate with chefs to purchase and order food and supplies
  • Review and maintain recipe books with GM and managers
  • Create and maintain recipe costing in partnership with leadership
  • Hire, onboard, train, and develop BOH staff
  • Promote teamwork across all teams
  • Handle challenges with tact and courtesy, responding patiently
  • Work flexible hours, including early mornings, late nights, weekends, and travel as needed

Physical requirements include moving and lifting up to 50 pounds as needed.

Qualifications
  • 5+ years of Executive Chef experience in a full-service restaurant
  • Leadership and team development skills
  • Proficiency in managing BOH systems

Salary Range: USD $70,000 - $100,000 per year.
