Property: The Legacy Hotel, Green Bay, WI

Legendary Hospitality announces the development of the Legacy Hotel, a boutique all-suites luxury property, located one block from Lambeau Field in the Legends District. This distinctive hotel will be the most luxurious in the region and is scheduled to open in September 2023. Legendary Hospitality’s service culture is steeped in the traditions of the Midwest, combining authentic and attentive service, with the region’s finest amenities.

Objective of Role

The Executive Chef's primary purpose is to ensure the continual preparation of unique and creative cuisine of the highest quality. Their focus is on providing an exceptional guest experience through presentation and flavor for dining rooms, banquets, and other culinary facilities.

The position is responsible for the smooth operation of the kitchen, controlling profit, stock, waste, hygiene procedures, and kitchen training. They also conduct kitchen job interviews, establish the weekly staff schedule, and enforce policies and procedures.

Primary Duties and Responsibilities

  • Ensure promptness, freshness, and quality of dishes by inspecting them daily.
  • Implement hygiene policies and examine equipment for cleanliness by following hygiene guidelines.
  • Design new recipes, plan menus, and select plate presentations based on season and customer demand.
  • Review staffing levels to meet service, operational, and financial objectives by tracking staff performance.
  • Hire and train kitchen staff, such as cooks, food preparation workers, and ware washing stewards.
  • Maintain the kitchen and surrounding areas in conditions that meet health code regulations.
  • Monitor inventory and purchase supplies and food from approved vendors.
  • Display exceptional leadership by providing a positive work environment, counseling employees as appropriate, and demonstrating a dedicated and professional approach to management.
  • Ensure food and sanitation standards compliance, adhering to food handling and sanitation guidelines.

Experience and Educational Qualifications

  • Degree in the Culinary Arts (preferred).
  • At least 2 years of experience in a similar role.

Other Characteristics Required

  • Excellent knowledge of BOH systems, ordering, and inventory.
  • Excellent communication skills.
  • Excellent leadership and interpersonal skills.
  • Excellent customer service skills.
