Job summary

Portland Harbor Hotel, part of Colwen Hotels, is seeking an experienced Evening Line Cook to join our fast-paced Food & Beverage team in Portland, ME. The role requires dependability, cooking experience, and a focus on quality and efficiency.

The position includes a $500 hiring bonus, with $250 after 3 months and the remaining $250 after 6 months of employment. Benefits are available per hotel policy and vary by property.

Qualifications

• Excellent verbal and written communication skills.
• Basic sanitation knowledge for workplace safety.
• Knowledge of food handling, preparation, and cooking procedures.
• Able to work in a fast-paced, sometimes stressful environment.
• Able to work quickly and efficiently.
• Able to work well with a team.
• Maintain personal hygiene.
• Prior related experience preferred.
• ServSafe/Safe Food handling certification as required by property.

Responsibilities

• Prepare food following recipe cards and production standards.
• Adhere to Colwen and brand standards.
• Cook menu items in cooperation with the rest of the kitchen staff.
• Follow Executive or Sous Chef instructions.
• Ensure food comes out simultaneously, in high quality and timely fashion.
• Date and rotate stored food items per safety standards.
• Ensure proper time and temperature standards.
• Maintain compliance with health, safety, food handling, hygiene codes.
• Assist in dish washing and other areas of the kitchen as needed.
• Note out of stock items and possible shortages.
• Operate, maintain, and properly clean all kitchen equipment for cooking, prep, and storage.
• Assist in prep work for the next shift.
• Ensure proper breakdown at end of shift and cleaning of kitchen and other workstations as needed.
• Perform other duties as assigned.
